What is ardennes?

"Ardennes" means a particular method of preparation; namely, the light brining and post-smoking of a piece of pork, usually the back muscle, but can also be a pork tenderloin. 
The name "Ardennes" is a nod to the Belgian Ardennes forests to denote the typical smoky flavour of Ardennes roast. The Ardennes Roast is smoked naturally with wood chips from the Belgian Ardennes forests. 

This is a thoroughly Belgian and traditional product.
